Oh boy! I just finished what is quite possibly the best chiscken breast I have ever had.

First off, I have to say after 3 sessions of using wood charcoal, I am hooked. I will probably never use processed charcoal ever again. It may take a little more effort than Kingsford, etc. (but the same as if you were to build a cooking fire while camping), that little extra effort more than makes up for it in taste.

I had gotten some chicken breasts with the notion of putting them on the grill. Last night, while watching various TV, I noticed that the Bon Appetit on the floor next to me was a barbecue edition. So, I looked through the chicken recipes, and found one for a rub that I happened to have all the ingredients for in my pantry. Tonight, I gave the Grilled Dixie Chicken with Cayenne Spice Rub a whirl. After the results, I was in heaven. It was another of those dishes which, while being very simple, makes me wonder just how do people come up with these ideas.

I wish there were people here to enjoy it as I did.

The recipe, from the July 2003 edition of Bon Appetit. Recipe by John Willingham. (hopefully that will keep this on the up and up)

Grilled Dixie Chicken with Cayenne Spice Rub

2 Tablespoons salt
1 Tablespoon coarse ground black pepper
1 Tablespoon packed golden brown sugar
2 Teaspoons garlic powder
1 1/2 Teaspoons cornstarch
1 1/2 Teaspoons onion powder
1 Teaspoon lemon-pepper seasoning with garlic and onion
(I find the garlic and onion part optional - I mean, why? when you've already
got the garlic and onion powders)
1 Teaspoon chili powder
1 Teaspoon cayenne pepper
2 4-pound chickens, quatered
(I forgot to look how many pounds, but I used 3 full breast halves)

This recipe also grills a sourdough baguette, which I did not do:

1/2 cup (1 stick) unsalted butter, room temp
1 sourdough baguette, cut on diagonal into 3/4 inch thick slices


Combine first 9 ingredients in small bowl; whisk spice rub to blend well. Transfer 1 tablespoon spice rub to medium bowl; add butter and mix well. (Rub and seasoned butter can be made 2 days ahead. Cover separately. Chill butter. Bring butter to room temperature before using.)

Sprinkle spice rub over both sides of chicken pieces. Arrange chicken pieces on waxed-paper-lined baking sheets. Cover chicken with more waxed paper and let stand at room temperature at least one hour and up to 2 hours.
(I used aluminum foil instead of wax paper)

Prepare barbecue (medium-high heat). Reserve 4 tablespoons seasoned butter. Spread remaining seasoned butter on 1 side of baguette slices. Place bread slices on platter and cover. Place chicken on grill, skin side up. Grill 20 minutes. Turn chicken over. Grill until skin is deep golden brown, about 15 minutes. Turn chicken again and grill, skin side up, until cooked through (no red shows when chicken is cut at thigh bone), about 5 minutes longer. Transfer chicken to platter. Brush chicken with reserved 4 tablespoons of seasoned butter.
(I would find the buttering of the chicken optional, myself)

Grill bread until just golden, about 2 minutes per side. Arrange toasts around chicken and serve.

I must say, it isn't a very representation of what my real preferences were. Perhaps if the survey asked a few more (say 20) meaningful questions things would pan out more to my preferences. Preferences for Joe, Carol, and Dyack (Dick) are far higher than they should be.

Reading the blurb on Dennis, I can't fathom how the survey figures he is a 100% match for me. I disagree with 4 of his agendas.

I was going to just start posting random lyrics as 'thoughts of the day', but a thought had occured to me. I'll put up peices of lyrics and see if anyone can guess what the song is. I'll go through the various songs I have, which go from the 60's to the 90's (I don't think I have anything fairly recent).

Anybody else feel that the commercials for The Hulk make the 70s series look like a masterpiece?

I find it sad that a movie made in 2003 has worse special effects than a TV series made in the 70s.
